We had a nice big fellowship lunch at church today. One of the dishes
that I brought was my version of candied yams. This is not my usual
sweet potato casserole recipe, but I wanted something a little quicker.
So I found a recipe on the can of cut yams and modified it to fit what I
wanted. So here it is:
Quick Candied Yams
1 - 40 oz can of Bruce's cut yams
1/2 cup butter
2/3 cup brown sugar
2/3 cup syrup from can
Mash yams until smooth to your desire. Combine syrup from can, sugar and
butter in saucepan, stirring to boil to thicken. Pour sauce over yams
and mix thoroughly. Bake in over 350 degrees F oven for 20-30 mins.
Then pour marshmallows on top and cook until browned. Remove and enjoy.
I really liked it and someone from church requested the recipe. So I
guess it turned out well.
